NARIKOL PITHA
Narikol pitha is from the Indian state of Assam. This item is derived from rice powder and coconut grate. When prepared its sweet taste and making process makes it unique.

Making process:
Its main ingredient is especially found sticky rice of Assam. The rice is soaked in water for around 5/6 hours and then it is dried in sunlight keeping in a utensil covered with banana leaves. When rice dries, it is then taken to DHEKI. Dheki is a pedestal Mortar and pestle, which is generally used to make granules or powder out of given raw ingredients. The sticky rice is processed in dheki, pedestal beater, to crush and make a fine powder. The sticky powder is kept in utensils as such that there is less air penetration in the crushed power so that stickiness remains intact. When crushing is over then the grained powder along with grated coconuts is taken to the kitchen for making the pitha. The sticky rice powder is spread over tawa with a hand in a circular layer and then grated coconut granule is placed in a straight line over the base and some sugar is added to enrich with sweetness, It is a process of around three minutes on a particular temperature that the base does not get burn. Then the circular sticky base is rolled with the small bamboo stick. Since the grated coconut is the filler of this lovely sticky powder base so it is known as Narikol pitha.
Til pitha is prepared with the same process but instead of coconut grate it's black sesame.
